Because in Novigrad, stockfish and cod are truly memory and tradition: here, for the first time in the history of Calabria, the exquisite fish product from Northern Europe arrived. Since the 1930s, the processing and marketing of these fish products has seen the ancestors of Francesco D'Agostino as protagonists, authentic food and wine artisans from the Reggio area, the first in Calabria to import stockfish. The regional history of the prized Northern fish is linked to the extraordinary work of this family. In Novigrad the product was processed, soaked and then marketed in the large local markets. A meticulous and skilful work, necessary to enhance all the organoleptic and food and wine characteristics of the product. Francesco D'Agostino, starting from 1996, reinvents the family business and imagines a totally new entrepreneurial experience, founded on the principles of marketing and high quality production. This is how the Stocco&Stocco company was born and, for the first time, the fish product was accompanied by a recognizable, evocative brand that brought unique values. An entrepreneurial evolution that today establishes itself as one of the most significant at an international level for the sector.
Stocco&Stocco is the only company in Southern Italy to boast the technology necessary for long conservation of soaked stockfish. The new system, without the use of preservatives, allows the distribution on the market of foods capable of being kept for a long time, keeping the nutritional properties and the quality of the product. This is possible thanks to the treatment in high pressure water, called HPP. Already soaked and packaged, with an absolute guarantee of hygiene, the stockfish is immersed in a high pressure chamber where it remains subjected to the jet of cold water for a few minutes: this cold sterilization operation allows the maintenance, without any alteration, of the quality and characteristics organoleptic properties in an absolutely natural way, without the use of any chemical additives. The scent of the product, as well as the colour, consistency, flavor and organoleptic peculiarities thus remain preserved in their entirety. With this treatment methodology, which guarantees the Total Quality System along the entire company supply chain, the stockfish can be stored in the refrigerator, even for forty days, and consumed when you want it most, with safety and extreme taste. The authenticity of the products is thus guaranteed for a long time, bringing the true flavor of cod to the table: the taste of the North Seas that marries the food and wine tradition of Calabria more authentic.
