The Azienda Agricola Granata is a small agricultural company located at 1300 meters above sea level, in the green heart of southern Italy, in the Sila National Park in Calabria which belongs to the tenth Biosphere Reserve in the world network of sites of excellence 'Unesco. We grow with an organic method and, by choice of lifestyle, we have resumed the cultivation of ancient grains which have a yield per hectare 50% lower than common grains. The grinding is done with a stone mill to have a unique product, we mill small quantities from time to time, to preserve the characteristics and aromas of our mountain, according to sales requests. We start from a type 1 grinding that is not too refined to preserve the wheat germ and the bran, essential elements for a flour of unique taste and quality. Our flours do not have additives, they are ""live"". We use our rye flours to produce a pasta with a very low gluten content and freselle, characteristic of our tradition. We bet on heroic mountain viticulture and at 1300 meters we started producing a unique white wine. In the portion of the company located at 850 meters we produce a red wine from native vines which we refine in oak and oak barrels. We also produce an extra virgin olive oil from Carolea, Tondina, Roggianella which give our oil the characteristics of an oil with a light fruity flavour. We also produce Sila potatoes recognized by a PGI. In short, ours is a wonderful, uncontaminated territory where it is still possible to produce in a traditional and sustainable way. This is our challenge in carrying on the family farm for generations.
