Flavors of Salento Street food - Le Orecchiette

Flavors of Salento street food is a small, family-run itinerant reality of popular cuisine. My wife and I are from Salento and we decided to take our kitchen ""around"" by preparing typical traditional dishes of our land. We are taking part in Artigiano in Fiera with the orecchiette made from semolina made exclusively from Italian grains which we season with turnip tops, meatballs with sauce, cacioricotta or stacciatella. We want to offer visitors the opportunity to enjoy a typical, genuine and rigorously freshly cooked dish.
