NicolಠCapatti is a young man with clear ideas: in 2015 he participated in the training course at the Alma Institute and subsequently began working with Maestro Iginio Massari where he learned the secrets of the processing of the mother yeast. In 2019 he managed to crown his dream, opening his pastry to Novi Ligure where he can give space to his creativity. In its ropes there are of course the leavened parties, but also a real fresh theory that ranges from traditional to modern cakes, up to the Mignon pastry shop, breakfast and ice cream products. For two consecutive years his pan de'or has been recognized as ""Best 10 Pandori d'Italia"" through a national competition held by Goloasi.it
