The Perugian craftsman was born from the experience gained in the processing of chocolate as early as 1982, according to the Perugia artisan tradition by Ercolani Fausto, owner of the aforementioned company, who loves to work chocolate and experiment with ever new combinations. For years now, our company, based its concept of commerce on originality and innovation, starting from the choice of excellent raw materials also linked to our territory. The processing is purely artisanal even if we are equipped with technological equipment. We produce everything by thoroughly following the HACCP self -control plan. The production includes small lots and multiple products in order to guarantee maximum freshness to all our references. Our activity also provides for third parties and participation in fairs in the national and international confectionery sector and it is in this sector that we have created the first European traveling cultural factory which is made up of machinery assembled with each other, (-8 mt linear) capable of showing the entire production process starting from the dried cocoa beans, reaching the printed chocolate tablet. In our itinerant path we put this ""factory"" available to schools of schools and adults so that we can disseminate and explain to them the value and difference of artisan chocolate against the industrial one. We have been present, for all six months inside the ""cocoa cluster"" at Expo 2015 and we operate normally with our chocolate benches in the most important squares in Italy, such as: Rome, Naples, Turin, Florence, Bologna, Modica etc ... our small reality Perugia has turned into a confectionery art atelier capable of transforming cocoa into an extraordinary experience ...
