OUR HISTORY Our company was born in 1995 and is handed down from two generations. We started the production of extra virgin olive oil, for the olives of the company and for those of third parties, with a small stone plant for 4 quintals the time. In 2000 the crusher was expanded with a new 12 quintal continuous cycle system. This allowed us to obtain the DOP, IGP, organic and cold-extracted certifications that would not be possible to get with the stone crusher. In 2015 we started the Montecucco di Caglieri Sara farm and we decided to realize the whole oil supply chain. The stone implant was then subsequently removed and in its place we have equipped a room at a controlled temperature for storage, bottling and sale. The number of olive trees is then increased by 1600 plants to 12000 plants with the same type of land and variety. These olive groves rest on hilly terrain at an altitude of 350-550 meters S.L.M. We take care of our olives in the smallest details and collect them by hand with facilitating tools. The crushing takes place within 12 hours of the end of the daily collection and cold extraction, then less than 27 degrees, is strictly monitored by electronic probes and control units. Our oil boasts a full-bodied consistency, intense aroma and delicate taste, the result of a particular cultivation Poli Cultivar, which combines the best characteristics of five different varieties of plants: Moraiolo, Pendolino, Corregion, Leccino and Frantoio. Furthermore, it gives the palate a delicate bitter note and a spicy aftertaste that can be combined with every type of dish, to taste the authentic flavor of extra virgin olive oil and donate to each dish an extra touch. The oil we produce comes only and exclusively from our olives and every year, based on the temperatures of the season and climate, we obtain an oil that varies in its organoleptic characteristics, such as bitter note and spiciness. This is the story of our oil and the work that over the years has led us to make it so authentic, now it is not remained that tasting it because a taste is better than a hundred words.
